Carrot Cake Energy Bites

Looking to mix up your energy bite game? Give these gems a try! The fresh, grated carrot adds something special. These are perfect as a post-workout snack or as a quick dessert. 

Ingredients:

1 cup walnut halves

1 ½ cups rolled oats

10 pitted Medjool dates

1 carrot, grated

1 tbsp maple syrup (optional)

1 tsp ground cinnamon

¼ tsp ground nutmeg

Directions:

Put the walnuts into a food processor or blender and pulse them a few times until coarsely chopped. Add the remaining ingredients and pulse until it forms a thick, sticky dough. If dough is too dry, add water 1 tablespoon at a time. Form dough into 1” balls. Store in a sealed container in the refrigerator for up to 1 week.
