Chunky Banana Bites
“These banana things are the best things that have ever happened to me,” said my husband. Thanks, babe, thanks. But I will admit, they are one of my favorite snacks! The secret to getting the best banana flavor is to use bananas that are very ripe (with many brown spots) but not completely brown. Two of these bites make a great post-workout snack! I like mine warmed up for a few seconds. Melted chocolate? Yes, please!
Makes: about 12 bites
Ingredients:
3 small, very ripe bananas, pureed (about 1 cup)
1 cup rolled oats
1 cup oat flour
¼ cup walnuts, chopped
1 teaspoon baking powder
1 tablespoon ground flaxseed
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon sea salt
1 teaspoon pure vanilla extract
3 tablespoons chocolate chips
Directions:
Preheat the oven to 350°F and line a baking sheet with parchment paperer. Puree the bananas in a high-powered blender, food processor, or immersion blender. In a large bowl, combine all ingredients and mix well. The mixture will be thick and wet. If it’s dry, add another banana.
Place 2 tablespoons of batter, for each bite, onto the prepared baking sheet. Bake until tops are golden brown, about 13-14 minutes. Let cool and enjoy!
