Coconut Cranberry Bites
Makes 12-15 balls
Ingredients:
¼ cup shredded dried unsweetened coconut, plus more for topping
1 ½ cups toasted pecans
1 cup dried cranberries
½ cup almond or peanut butter
½ cup maple syrup
1 Tablespoon chia seeds (optional)
1 Tablespoon hemp seeds (optional)
Directions:
In a food processor, combine all ingredients and process to form a stiff paste or meal. Alternatively, mix ingredients by hand for a chunkier texture. Form into tablespoon-size balls and roll in coconut to coat. Serve immediately or store in an airtight container for up to 4 days.
Note: Depending on the consistency of your almond/peanut butter, you may need to add additional maple syrup if the paste is too dry or additional coconut if the paste is too wet. Adjust quantities until you have a workable dough that you can easily roll in your hands.
