Quinoa for Breakfast

 

This is a great use for leftover quinoa, to switch up your morning oatmeal or as a substitute if you have trouble digesting oats. It’s a great way to work some extra plants into your day! I love this with raspberries, blueberries, cinnamon, walnuts, and pumpkin seeds. But feel free to get creative! Talk about a healthy way to start the day!

 

Makes: 1 serving

Ingredients:

1 cup cooked quinoa

2-3 tablespoons milk

Toppings such as berries, nuts, seeds, spices, roasted and diced sweet potatoes, or anything else

 

Directions:

Add milk to the quinoa, you may need more or less milk depending on your preference, then heat on the stove or in the microwave. Add the toppings. Enjoy!
