Easy Texas Caviar

 

There are many versions of this dish but most of them are loaded with unhealthy ingredients - and LOTS of them! This is a healthy version that packs all the flavorful punches but won’t leave you in a food coma!

Makes: 5-6 cups

Ingredients:

2 cups black beans, rinsed and drained

2 cups black-eyed peas, rinsed and drained

1 cup diced red pepper

1 cup diced green pepper

½ cup diced red onion

2 green onions, chopped

1 cup corn

1 ¼ cup cherry tomatoes, cut in quarters

1 ½ tablespoon fresh lime juice

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Sea salt to taste

Directions:

Put the ingredients in a large bowl and mix well. The flavors get better as the salad sits in the fridge overnight. Leftovers store well in a covered container in the fridge for about a week. 

This salad could be served over a bed of greens or on top of a whole grain, such as brown rice, quinoa, or buckwheat. Feel free to add jalapenos if you would like to increase the spice!
