Classic Hummus
The secret to a hummus with a heavenly consistency is to shell the chickpeas before putting them in the food processor. It’s a lot of work, but is well worth the reward!
Makes: 2 ½ cups
Ingredients:
2 (15 oz) cans of chickpeas, rinsed and drained
1 large or 2 small cloves garlic
⅓ cup tahini
¼ cup fresh lemon juice, or to taste
1 teaspoon fine-grain sea salt, or to taste
Directions:
Shell the chickpeas by rubbing each one between your fingers, discard the shells. In a food processor, add the garlic first, mince, then add the chickpeas, tahini, lemon juice, and salt and process to combine. Add 4 to 6 tablespoons of water, 1 tablespoon at a time, to reach desired consistency. Serve with grilled vegetables, falafels, raw vegetables, potatoes, or in other recipes that call for hummus or dressing.
