Turmeric Energy Bites

 

Makes: 16 to 18 bites


Ingredients:

1 ⅓ cups rolled oats

¼ cup chopped or sliced almonds

¼ cup hemp seeds

½ cup almond or peanut butter

¼ cup 100% maple syrup

1 teaspoon lemon zest

2 tablespoons freshly squeezed lemon juice

1 teaspoon ground turmeric

Pinch sea salt

Pinch freshly ground black pepper


Directions:

Add the oats, almonds, and hemp seeds to a medium bowl. Mix in the almond butter, maple syrup, lemon zest, lemon juice, turmeric, salt, and pepper until well combined.


Cover a small tray or plate with parchment paper. Roll the mixture into tablespoon-size balls and place them on the tray.


Place the tray in the refrigerator to chill until set, then transfer to an airtight container and keep in the fridge for up to 1 week or the freezer for up to 2 months.
