Berry Melon Power Smoothie

This smoothie was created out of excess melon and trying to figure out different ways to use it! Melon in a smoothie? Yup! It’s delicious! If you find yourself with tons of melon, cube or dice it, then freeze it to use later in smoothies, slushies, or sauces. A few fresh mint leaves would make this the perfect treat on a hot summer morning. It is packed with protein, vitamins, antioxidants, and complex carbohydrates. Just what the body needs before a workout – or to start out your day.

 

Serving size: 2

 

Ingredients:

1 ½ cups almond milk, or other non-dairy milk

1 cup fresh or frozen cubed honeydew melon

½ fresh or frozen blueberries

2 tablespoons ground flaxseed

1 tablespoon chia seed

1 tablespoon hemp seeds

½ teaspoon ground turmeric

1 pinch black pepper

1 handful kale, stems removed, or other dark leafy green

1 pitted date (optional, for sweetness)

 

Directions:

Blend almond milk and fruit together until smooth. Then add remaining ingredients, with the kale being on top, and blend until smooth. To make the smoothie thicker, add a few ice cubes or more milk to thin it out. Serve immediately.
