Pumpkin Chai Super Oats

Makes: 2 servings

Ingredients:

⅔ cup rolled oats

⅔ cup water

½ almond milk, more as needed

¼ cup canned pumpkin

1 tablespoon pumpkin seeds

1 tablespoon chia seeds

1 tablespoon hemp hearts

½ teaspoon vanilla extract

¼ teaspoon ground ginger

¼ teaspoon ground cinnamon

¼ teaspoon ground cardamom

Directions:

In a small saucepan over medium-low heat, combine the oats and water, stirring frequently. Once oats are creamy, stir in almond milk and reduce heat.

Stir in the remaining ingredients. Add additional milk as needed to reach desired consistency. Divide into bowls and top with dried fruit such as cranberries, fresh blueberries, diced pear, sliced bananas, or nuts. Store leftovers in an airtight container in the fridge for up to two days.
